UXUS-designed brasserie opens at Schiphol Airport

Positioned by Schiphol as the highlight of the new Departure Lounge 2, Kebaya invites travellers on a culinary adventure.

Authentic Asian flavours blend contemporary and traditional Pan-Asian influences into an eclectic indoor-outdoor dining experience.

Complementing Schiphol’s ambition to develop the hub "into Europe's Preferred Airport for travellers and airlines alike”, Kebaya is designed to exceed passenger expectations of what an airport food experience looks, feels and tastes like.

That experience revolves around 3 principles: excellence through authentic asian street food, prepared to order in the central glass-wrapped theatre kitchen; convenience through a novel digital tablet ordering system and “travellised" take-away options; and comfort through natural materials, mood lighting and multiple seating modes to fit various traveller needs.

We designed the overall atmosphere to evoke a south-east asian market where the theatre of food-making takes centre stage, with a rich layering of colour and texture to contrast with the airport’s more functional concrete and glass environment. Our scope included everything from interior design, lighting and visual merchandising to the visual identity, uniforms and tone of voice to create a full experience that gives passengers a moment to relax, refresh and recharge when they need it most. The project is already exceeding HMSHost’s (the operator) expectations, and has become a favourite destination for discerning foodies and travellers.
